It started with a craving nobody could fix. A toastie that hit different — one loaded with the bold, sun-soaked flavours of the Caribbean. Mango chutney, Bajan hot sauce, jerk spice, tamarind. The kind of thing you'd find at a rum shop on a backstreet in Bridgetown, not on a cafe menu in Melbourne.

So we built it ourselves. Barbados Slim was born — a little slice of the islands dropped right into the heart of Windsor.
